Chianti Classico

義大利托斯卡尼省葡萄酒主要品種為聖爵維斯葡萄(Sangiovese),但因區域名稱不同、酒名認證不同,而有著不同產區的規範與特徵。如同法國酒的AOC,義大利酒也有『歐盟法定產區認證(DOC: Denominazione di origine controllata) 』、『歐盟保證法定產區認證(DOCG: Denominazione di Origine Controllata e Garantita) 』、『陳年精選等級(Riserva) 』、『珍藏遴選級(Gran Selezione) 』不同的等級認證分類,因此光是托斯卡尼的聖爵維斯葡萄(Sangiovese grape),就至少有十種以上不同的法定酒名,且每家酒莊為符合其各屬之公會規範並要兼顧百年家族的傳統哲學,並非每一年的生產狀況皆相同。如此算一算,光是這葡萄品種、每一年便有上千種需要記憶,更不要提還有不屬於認證區域的其他酒莊以及義大利其他區域了。

 

譬如說聖爵維斯葡萄種,自佛羅倫斯(Florence)附近往南一直延伸到錫安納(Siena)區域生產的統稱為奇揚第(Chianti);但奇揚第(Chianti)可分為『奇揚第產區(Chianti DOCG)』和『經典奇揚第產區(Chianti Classico DOCG)』。雖然只有一字之差,但這是兩個不同的認證。一般來說,後者被普遍認定較嚴謹,畢竟現在的奇揚第產區(Chianti DOCG)實在產量太大,品質不一。而且『經典奇揚第(Chianti Classico DOCG)』認證規範中,其公會於『陳年精選等級(Riserva) 』上再增加了『珍藏遴選級(Gran Selezione) 』,足以顯示該公會欲提高其認證公信度的決心。奇揚第公會(Consortium)創立於1716年,至今正好滿300年,身為義大利最古老公會,果然每隔數十年便有創舉,且光看其每年新酒評選會(Chianti Classico Collection)的大陣仗即能知曉一二。

 

Amarone

Amarone阿瑪羅內葡萄酒,其類似加拿大甜酒(或貴腐酒)的釀造方式,讓葡萄本身的甜度先變高、再進行釀造,因此對於大部分不習慣酒精度或不喜酸澀葡萄酒口感的人,Amarone阿瑪羅內葡萄酒是個入門的好選擇。按照Amarone阿瑪羅內葡萄酒的『歐盟法定產區認證(DOC: Denominazione di origine controllata) 』及『歐盟保證法定產區認證(DOCG: Denominazione di Origine Controllata e Garantita) 』的官方規範,其區域內的分級共有四種葡萄酒分級,分別是『Valpolicella DOC』、『Ripasso瑞帕索DOC (Valpolicella Ripasso DOC)』、『Amarone阿瑪羅內DOCG(Amarone DOCG) 』、以及『Recioto 瑞西歐德DOCG (Recioto DOCG)』。

Amarone阿瑪羅內產區葡萄酒,最大的特徵為其深沉的暗紅色,明顯的櫻桃果、黑醋栗、巧克力、雪茄、香料、乾果香氣、甜而不膩、單寧飽滿但不咬舌。由於其釀造法是俗稱的『乾式釀造法』,也就是葡萄採摘後不立刻釀造,而是先陳放於室內,讓葡萄水分蒸發略呈乾扁後,再開始做酒,因此這個產區中等品質以上的酒,喝起來的尾韻總是帶著新鮮葡萄乾的香氣,且呼吸時帶著甜度,如同好的綠茶會回甘一樣,令人回味。

 

Brunello

托斯卡尼另外兩大葡萄酒名產區,位於錫安納(Siena)城再往南的蒙塔奇諾(Montalcino)以及蒙特普查諾(Montepulciano)兩大產區,其公會認證葡萄酒名分別為『蒙塔奇諾之布雷諾紅酒(Brunello di Montalcino) 』與『蒙特普查諾之諾比雷(Nobile di Montepulciano)』。前者於這三十年晉升為義大利珍貴名酒,常與酒史上素稱為『義大利酒王(King of Wine) 』的北義『巴洛羅紅酒(Barolo)』並稱,更因美國市場的大量需求使其價格飛黃騰達,短短三十年內不僅被美國酒評家封為『酒后(Queen of Wine) 』,其價格與巴洛羅紅酒也並駕齊驅,且其酒越陳年、價格亦有攀升之勢,成為最值得投資的托斯卡尼陳年酒款。

 

Nobile

Chianti Classico

Consortium

From its foundation the Consortium has been protecting, overseeing and valorizing the Chianti Classico denomination. From the Consortium for the protection of Chianti wine and its mark of origin of the 1924 to today’s Consorzio Vino Chianti Classico the organization has changed its name and the design of its logo, but its trademark has always been the historic symbol of the Black Rooster.

Today the Consortium, which represents nearly 96% of the DOCG production, is one of the principal representative for the institutional organizations in Italy and in the European Union in the grape-growing and winemaking sector. It is internally organized into different departments performing its official tasks: safeguarding the denomination, valorizing the brand and providing a variety of services to its members.

 

The entire production chain, from grape growing to wine bottling, is supervised by a tracking system the data of which are entered into a public database. This system enables consumers all over the world to check the bottle they’ve purchased.

The Consortium also closely monitors its wines on the market.

 

Franciacorta/Amarone

Consortium

Founded in 1924, the Consortium for the Tutelage of Valpolicella DOC Wines is an association of grapevine growers, wine makers and bottlers of Valpolicella wine production area, that includes 19 municipalities of Verona province.

 

As the Consortium represents more than the 80% of the producers using “Valpolicella” appellation, it promotes activities to enhance the value of the whole territory: the wine and its area of origin, Valpolicella history, traditions and the typical features that make its landscape unique in the world.

 

The Consortium has very important institutional tasks: it takes care of promotion, value enhancement, and information diffusion for Valpolicella wines and territory and it is responsible for the tutelage of brands and viticulture in Valpolicella wine production area. It is in charge of the surveillance, safeguard and protection of the designations.

 

The wide production area of Valpolicella DOC and DOCG wines includes the submontane area of Verona province and is divided into three different zones, according to the production regulations:

 

The Classica, formed by five geographic areas, including the areas around Sant’Ambrogio di Valpolicella and San Pietro in Cariano valley, Fumane, Marano and Negrar valley.

Valpantena valley.

The DOC area includes the northern districts of Verona province and Illasi, Tramigna and Mezzane valleys.

The main grape varieties of the area are Corvina, Corvinone, Rondinella and, to a smaller extent, Molinara.

 

The wines of the appellation are Valpolicella, Valpolicella Ripasso, Amarone della Valpolicella and Recioto della Valpolicella.

 

Brunello/Nobile

Consortium of the Brunello di Montalcino Wine

The Consortium of the Brunello of Montalcino Wine was founded in 1967, on the morn of its being branded a D.O.C. wine, as a free association between winemakers bent on safeguarding their wine and on accentuating its qualities. The Consortium has favored the onset of a productive fabric made of old and new, small and large winemaking firms alike, brought together by the common interest of respecting nature and aspiring to the highest quality of wine.

The Consortium organizes events in Italy and abroad, as well as participation by winemakers in trade fairs. It manages public relations and the image of Montalcino wines through its press office, and distributes news and information on an official website, with numerous publications in several languages. A business more in the shadows but no less important is the assistance service provided to specialized press and to opinion makers, to which it caters with organized wine tasting and sampling events and tours. The assistance given to members on the standards that govern wine production are just as important.

Q1: 授課語言為何? 有中文翻譯嗎?

A: 授課語言以英文為主,本部會依照現場狀況斟酌翻譯專業術語部分;授課老師若以義文授課,本會將全程翻譯為中文。本課程著重於義大利葡萄酒品種、風土、與各代表酒莊單一葡萄坡的感官分析,建議學員需有基礎的英語能力即可,例如能說出聞到的風味、是否為北義葡萄品種...等。

Q2: 我吃素,請問午餐有提供素食嗎?

A: 有的,請吃素的學員於填寫報名表時,勾選素食的選項,我們將提早安排。

Q3: 如果沒有全程參與課程,還能參加考試取得認證嗎?

A: "全程參與課程"為參與證照考試的必要條件,若遇不可抗拒之事件,本中心可視情況並需義籍授課講師全數同意之前提下允許跨班補課。

Q4: 如果我沒通過考試可以補考嗎? 需要另外付費嗎?

A: 如學員沒有通過考試,本會提供補考,目前在兩次補考範圍中,學員皆通過考試,請學員帶著自信以及認真學習的態度參與課程。

Q5: 義大利美食教育中心晚會Barolo Library Dinner,我不方便參加,請問能退費嗎?

A: 不能,義大利美食教育中心晚會Barolo Library Dinner是本部特別將北義傳統複製帶來台灣,目的在於讓學員們有更深刻、更完整參與義大利美食美酒交流的體驗。鼓勵學員們參加,講師當天也會出席認識學員。

Q6: 拿到的認證是義大利官方認證嗎? 通過考試能夠得到什麼認證?

A: 學員必須經過專業考試(筆試以及感官測驗)才能得到專業證書。本證書由CLUBaloue義大利美食教育中心、北義葡萄酒DOCG官方公會Consorzio di Tutela Barolo Barbaresco Alba Langhe e Dogliani共同簽署認可。
